I've had some water sprite in a tank for 4-6 weeks. I am not getting much of any growth and the plant has started to yellow/brown. High pH, kH, and gH. Nitrates normally between 20-40 ppm. I dose with some fertilizer, but not too much as I don't want to raise nitrates too high. Any insight on how to better grow this plant would be great. Thank You

What sort of lighting do you have? Maybe try letting some float for a while. It grows well as a floater.

I've the finnex 24/7 on it. It is a deep tank, but the yelling part is probably only 12" deep

Based on the info provided, I would guess it is due to high light and not enough CO2. The plant is probably trying to grow faster then it can.
Initially I saw the yellowing and would have guessed nitrogen but since it looks like that is high enough the only other building block that's missing is carbon.

You have high light which puts the growth at a fast pace, you need to provide the building blocks to keep up with that pace.
